Process is key, and just like using story structure, it does not mean formulaic. Creativity and innovation are key to being genuine and unique. Having a process doesn't preclude that, but frees you to focus on those skills. Your point on understanding your reader is often missed and applies to all writing. The #1 complaint of editors is that the submitter didn't understand (or bother to research) what type of material the editor works on or publishes. Same with magazines, publishers comment that the writer didn't appear to have read even one issue. And public speakers - well they get immediate feedback if they didn't know their audience.
